You can count on the fact that Google has thought of that. By using
invitations they controlled the adoption of the service, which allowed
them to make estimates on how much space is used by a single account,
on average. That allowed them to offer 1gb, then 2gb, etc, to every
user, being fairly certain that, oh I don't know, "95% won't use more
than 50-100mb at most".

I doubt they actually have 2.5gb ready for every person to fill up.
I'm not sure what would happen if every single one of us suddenly
decided to start uploading insane amounts of attachments, spiking our
usage from 10% to 80% in a few hours. We can be sure that Google has
taken stuff like that into consideration, one way or another. Adding
storage constantly, or placing constraints on how much you can
actually upload in a day, or whatever.
