You could probably get away with a stage2 at an installfest if they're all pros.

 

I would definately say that you should trust your insticts with gentoo. I learnt more about Linux installing gentoo than I have with anything else, and at the end of it you've got a beautifully customised Linux which you don't need to update (just update kernel and software when you feel like it).
