Look at qmail. With this package you can insert programs into the mail
handling routine, intercept incoming mail, reformat it and send it out
to where ever you want. I use this particular package and do this
myself with Perl. It's very powerful and works on the server level, not
the desktop. It's open source and fairly easy to configure.
