On my test sites ( http://seside.net/ ) it was similar. For a new site
the root URL would get listed "pretty quickly" when using sitemaps or
the manual URL submission tool. However, if no follow-up links are
found by Google, Google will remove that listing after some time. I
think the idea is to give the site a chance to be found; if during that
test time people start linking to the site then it is worthwhile to
include in the index from the start. So if your site disappeared from
the listings after that "demo period" then it is most likely that you
just do not have any (or not enough, or not good enough) links coming
into the site.
Also keep in mind that this behaviour is only done for non-competitive
areas. If you try to do this for a site called "loose-weight-now.com"
then you will not get this kind of freebe - in fact you might get stuck
in the "new-site-competitive-area" filter (aka "sandbox") on Google for
several months.
Work on your links, then Google will know that you want your content to
be taken seriously and will then list it whereever possible :-)
