The people who send YOU mails are not added to the contact list
automatically, as a spam-protection mechanism. But if you reply to
someone, they will be added.

However, you can manually add the sender to the contact list if you
click the 'More Options' link near the subject line, and then click
'Add sender to Contacts'.
