I suggest Centos (gives you that old RHEL feel plus stability) and
something like Webmin +Virtualadmin , or VHCS.

This allows you to easily manage your virtual hosts, virtual email
hosts and forwarders, etc.

For webmail try "Horde" which is MySQL based, or Neomail. "NutsMail"
template packages do give Squirrelmail a whole new look and feel.

If you are used to RedHat and this is a production server you need to
keep available , stick with the flavor you know. I manage hundreds of
commercial hosting servers and centos does very well.

As for the desktop I'd stick with Edubuntu ..
